How are you adding page numbers? If you are using the predefined formats under Insert > Page Number, Word often gets confused when a document contains more than one section and/or more than one header/footer.
The easiest way is to access headers and footers directly. In Print Layout view, you can double-click the header to activate the header/footer view. For example, if you have the desired page number in the first page footer, you can copy it into the main footer.

Note, when you copy to the other page you likely will get an extra paragraph mark which will bump your page number up on that page. You can delete the extra paragraph mark.
This has to do with the different first-page setting for your header/footer. Page numbers are in headers or footers and each section of a document has three of these. You inserted your page number into the first-page one and it does not show up on other pages.

- Page Numbers in Word 2007-2019 (365)
Another simple way to add a page number is to go to the spot where you want it and press Alt+Shift+P.

Thank you both. Part of the issue is I'm passing the document between Mac and Windows, so not sure it has all the same features and translates. But using Mac, I seem to have figured out a way to create two sets of page numbers and delete the first without issue...
1) At the top of page 6 (my Introduction page), I double click the header. It reads: "First Page Header -Section 2-".
2) In the Header & Footer bar, I check off "Different First Page." This turns on "Link to Previous." I click "Link to Previous" to deselect it.
3) In the Header & Footer bar, I go to "Page Number" -> "Page Number." For "Alignment," I choose Right, and leave "Show number on first page" unchecked. I click on "Format," and after "Start at" I enter 1.
4) Now I have page numbers starting at 2 on the next page (page 7).
5) Now I go to my title page, the first in the document, and double click the header. It reads: "First Page Header -Section 1-".
6) In the Header & Footer bar, I check off "Different First Page." The header now reads "Header -Section 1-".
7) In the Header & Footer bar, I go to "Page Number" -> "Page Number." For "Alignment," I choose Right, and leave "Show number on first page" unchecked. I click on "Format," and after "Start at" I enter 1. Now the header reads "First Page Header -Section 1".
8) Now I have page numbers starting at 2 on the next page (the actual page 2).
9) To test it, I now go to page 2 (the actual p. 2), I click on the header, and I delete the box around page number 2. This deletes all the page numbers in the first section, but keeps the page numbers in sequence after the Introduction page/for the second section.
Though this works, it seems like a highly particular set of steps and I'm not sure Word for Windows has all the same features -- does it have "Different First Page" in the Header & Footer bar? Is this a sound way of achieving what I'd like?
Thanks for all your help!

The controls for the header and footer in the Windows version are in the Header and Footer tab which shows up when you are editing a header or footer.

Thanks Charles. Can you think of any other reasons why my document might be so wonky? It seems like I have to run through very particular steps to achieve what I'm looking for. You'd think I'd just be able to create a new section break, deselect Link to Previous, and add page numbers smoothly, but that just hasn't been the case for me. For example, why is it that sometimes when I leave "Show number on first page" unchecked, a number still appears on the first page? Thanks again.

I am not on a Mac and do not know anything about "Show number on first page." This is not something I have ever seen, even when I was using a Mac. I am not discounting your experience, I just do not share it.
AFAIK, repeating page numbers are solely a property of headers and footers and follow their rules. This is true even when the page numbers do not look like they are in a header or footer.
If you do not have "Different First Page" set for a header or footer anything done will be on the first page as well as others. Note that this setting applies to both headers and footers as a unit in the section.
The Header/Footer Settings Recap applies to all versions of Word although many of the controls are not available in mobile web versions. Page numbers work the same in the Windows and Mac versions of Word (controls in slightly different places, some different keyboard shortcuts).
AFAIK, everything I wrote in Page Numbers in Word 2007-2019 (365) applies to the Mac versions.
Basic concepts:
- Every section has three headers and three footers that are independent of one another.
- Page numbers are normally in headers or footers.
- Each of the headers and footers in sections after the first one may be linked to the same header/footer in the previous section, or not. This is a separate setting for each one.
- In multi-section documents you need to know which section you are in, which header/footer you are in, and whether or not it is linked to previous.
- Any change made in a header/footer linked to previous will change not only that header/footer but also the linked one.
I urge you to read and perhaps bookmark the links provided. What I've written here does not cover what is covered in those pages.

"Show number on first page."
Hmm, I wonder if that option was part of the old interface (perhaps in Word 97), when Word put page numbers in frames, by default, unless you made use of the Insert page number command on the Header and Footer toolbar.

This is the old Insert Page Numbers dialog box (which put page numbers inside frames):
It includes a "Show number on first page" option. However, it has never been a good idea to make use of this dialog box.

Thank you both! Is that "Show number on first page" just particularly fickle? Doesn't always seem to work for me.
Strangely, it seems like I have to uncheck "Different First Page," then deselect "Link to Previous," then go to Page Number and tell it to not show the number on the first page and to start at 1. After I do all that, "Different First Page" automatically checks on again, starting the page count at 2 on the following page. This is what I want formatting-wise.
However, if I simply leave Different First Page on to begin with, then adjust my Page Numbers as above, I get a 1 on the first page.

Which version of Word are you running? Do you have an older version with traditional menus and toolbars? In that case, have a look at http://wordfaqs.ssbarnhill.com/FrontMatterToolbar.htm.
